1 clove garlic
3 tbsp strong cheese grated (cheddar or Parmesan)
100g pancetta chopped (or smoked streaky bacon)
- Put pasta on to boil. Fry onion in a tiny amount of olive oil until it is soft then add chopped garlic, fry gently for a further minute.
- Turn up the heat and add pancetta. Fry until the fat is translucent (3-4 mins) then add a ladle of the cooking water from the pasta. Simmer until reduced. Stir through 2 tablespoons of the cheese until melted into the sauce.Taste and season with salt and pepper to taste
- Mix the sauce through the pasta then serve. Sprinkle remaining grated cheese on top.
You can vary this recepie by adding mushrooms (just before you add the pasta cooking water) or chopped chilli (when you fry off the pancetta) or cherry tomatoes (when frying off the pancetta).
If you use bacon, it ends up being a very cheap meal!
