  • 1 onion chopped

  • 1 1/2 tbsp tomato puree

  • 2 tsp olive oil

  • 410g tin kidney beans

  • 1 1/2 tsp bouillon powder or vegetable stock

  • 2 cloves garlic crushed

  • 200g tin chopped tomatoes

  • 100g mushrooms sliced


  1. Heat the oil in a pan and add the garlic and onion. Cook for a couple of minutes.
  2. Add the mushrooms to the pan and cook until soft.
  3. Add the bouillon or stock, tomato puree, tinned tomatoes and beans.
  4. Season and simmer for around 10 minutes.
  5. Remove from the heat and serve with pasta, rice or quinoa, according to preference.

Handy Hint

This recipe can be made in batches and frozen.

    This is just as simple as a traditional bolognese but great for veggies (or veggie visitors) and is really filling and tasty.
