Cheesy potato cakes

  • 1 onion chopped and cooked

  • 1 handful cheddar

  • 1 large baking potato

  • 1 eggs

  • 1 tbsp butter


  1. Mash the potatoes with lots of butter and a handful of grated cheese. Add the chopped, cooked onions.
  2. Spoon the potato out and shape them into burger-style portions.
  3. Add a slice of cheese on top.
  4. Glaze the cakes with the egg to seal it all together and put them in a frying pan with a dab of butter or under a hot grill for a couple of minutes until piping hot and the cheese on top is melted.

Handy Hint

You can add peas, cooked bacon bits, chopped pepper, etc to fill it out or add more veggies.
