Caramelised onion quiche

  • 1 splash milk

  • 150g cheddar strong, grated

  • 1 tbsp sugar

  • 50g goat's cheese

  • 3 eggs

  • 100g cherry tomatoes

  • 1 pinch herbs mixed

  • 4 onions

  • 284ml single cream

  • 500g vegetarian shortcrust pastry one pack, or make your own


  1. Start by chopping the onions and fry off in a little oil on a low heat without browning. Let them cook until soft, then add the sugar and allow to caramelise for a few minutes, then leave to one side.
  2. Prepare a 12 inch flan dish and roll out the pastry to fit, and bake blind for about 15 minutes.
  3. Mix together eggs, cream and milk together, put onions in the bottom of the pastry case.
  4. Put grated cheese on top, then add small chunks of goats cheese.
  5. Cut tomatoes in half and arrange over the cheeses, then pour over the egg mixture.
  6. Sprinkle the mixed herbs over the top, and bake in a hot oven, at about 190-200C until lovely and brown and firm to touch.

Handy Hint

You can always substitute ingredients, like leeks for onions, different types of cheese, for meat eaters add bacon lardons, I have even added a few black olives. This is lovely and a real family favourite.
