Beef stew and dumplings

  • 1 medium onion peeled and diced

  • 2 tsp baking powder

  • 250g red lentils

  • 1kg lean diced braising steak

  • 2 medium carrots peeled and diced

  • 100g plain flour

  • 2 medium parsnips peeled and diced

  • 1 small swede peeled and diced

  • 500g vegetarian suet

  • 1 beef stock cube


  1. Put steak in a large pan and cover with water.
  2. Bring to the boil, strain, cover with water again and return to the heat.
  3. Add the diced veg, bring back to boil, add stock cube. Simmer for 1 hour.
  4. Add lentils and cook for another 30 mins (add seasoning at this point).
  5. FOR DUMPLINGS: Sift the flour, add suet and baking powder.
  6. Slowly bind with just enough cold water to make dough.
  7. Shape into balls, place on stew to cook for 15/20 mins (turning over halfway).

Handy Hint

fresh beef stock is nicer, or use oxtail soup.
add a bayleaf if you have one when seasoning.
the dumplings can be finished off in the oven if you like.
