Banana, apple and coconut crumble

  • 3 tbsp sugar

  • 1.5 tbsp sugar (to sprinkle over the fruit)

  • 150g flour

  • 45g desiccated coconut

  • 560g cooking apple peeled, cored and chopped

  • 3 tbsp water

  • 100g butter

  • 2 banana sliced


  1. Preheat the oven to 200C/Gas Mark 6.
  2. Rub butter into the flour or alternatively whiz in a blender. Stir in coconut and sugar.
  3. Fill an oven proof dish with the apples, bananas and water.
  4. Sprinkle over 1 1/2 tablespoons of sugar and top with the crumble mix.
  5. Bake in the oven for 35 minutes.

    The bananas go really mushy in amongst the other fruit, so you can't really tell they're there, but my dh and dd both thought it was delicious.
