  • 60ml olive oil

  • 1 pinch salt to taste

  • 1 lime juiced and zested

  • 1/2 chilli very finely chopped

  • 2 tbsp almonds ground

  • 4 cloves garlic finely chopped

  • 1 bunch coriander


  1. Put all the ingredients in a food processor and blend.
  2. Place the pesto in an ice cube tray and freeze.

Handy Hint

This pesto makes lots of things 'zing', especially vegetable soup.
