  • 1 medium onion chopped

  • A pinch of salt and pepper

  • 2 tbsp olive oil

  • 1 red pepper chopped

  • Some garlic (optional)

  • 1/2 jar red pesto

  • Some mushrooms chopped (optional)

  • 6 chicken thigh (free-range preferably)


  1. Preheat oven to 200C/Gas Mark 4.
  2. Place all the ingredients into a large heat-proof dish, mixing pesto and oil in well.
  3. Place the dish into a hot oven, uncovered, and bake for around 50 minutes, turning food during the cooking time once or twice.
  4. Check that the chicken is properly cooked and enjoy with rice or couscous.

Handy Hint

If children are not eating this meal add red wine for a more adult taste.

    Lovely recipe but pesto usually contains cheese (dairy).

    You might want to change the allergy information on this one as pesto sauces (shop bought) usually contain cashew nuts.

    This recipe is so easy children will enjoy helping.Also if they dont like onions try leeks,or ommit completly. Try different combinations of their favorite veg adding a few cherry tomatoes for extra flavour. Its just a pop in the oven and enjoy kind of dish.
