Blueberry and banana cake

  • 190g self-raising flour

  • 2 tsp vanilla extract

  • 160g soft brown sugar

  • 1 lemon zested

  • 2 large eggs

  • 150g blueberries

  • 125g butter melted

  • 200g bananas mashed


  1. Preheat the oven to about 150C for a fan assisted oven. will be more normal ovens.
  2. Add the sugar to the melted butter and mix. Beat eggs and then add and mix. Add the mashed bananas and vanilla extract and fold in. Add the flour gradually. Once mixed well add blueberries.
  3. Makes about 12 large muffins and will take about 15/20 mins. I make one large square cake and cook for around 40 mins (depends on the size of the tin).

Handy Hint

Can be frozen- I make 1 large cake & divide into small squares which I freeze for lunch boxes, snacks etc.

    Yummy cake reciepe. I needed to keep it in the oven longer than 40 mins though, roughly an hour actually. I hadn't read the comments section about the lemon rind and so I just assumed it was the juice of one lemon in with the wet mixture. I did this and funnily enough the cake came out super moist (did this contribute? maybe!). Anyway, definitely a good 1st birthday cake for the littl'ne.
