  • 1 onion chopped

  • 1 tsp salt

  • 1 red pepper chopped

  • 2 courgette thinly sliced

  • 2 stalks celery sliced

  • 1 green chilli seeded and chopped

  • 1 tbsp dried oregano

  • 2 tsp ground cumin

  • 2 cloves garlic minced

  • 1 tin chickpeas drained

  • 2 carrot sliced

  • 1 tsp chilli powder

  • 2 tins whole plum tomatoes


  1. Mix all the ingredients together in the slow cooker.
  2. Cover and cook on low for 6 to 8 hours, or on high for 3 to 4 hours.

    Fab! I added 2 tsp of garam masala and used red peppers as I didn't have courgettes, plus added in some ripe cherry tomatoes and it was absolutely delicious and even better the next day. I cooked it all day in the simmer oven of my Aga (I don't have a slow cooker but the temp is about the same). So easy I am looking forward to making it again. Am now on the lookout for more one pot slow cook easy recipes like this one...
