  • 50g butter

  • 500ml milk

  • 1 tsp mustard

  • 75g mature cheese or more if you like it really cheesy

  • 8 eggs

  • 50g plain flour

  • 5 slices bread (1 for breadcrumbs, 4 to serve)


  1. Put eggs on to boil for 10 minutes.
  2. Meanwhile, make the cheese sauce by melting the butter in a pan.
  3. Add the flour to the butter, stir well and cook for a couple of minutes.
  4. Whisk in the milk bit by bit, stirring constantly and heating gently until the sauce starts to thicken.
  5. Add mustard and season.
  6. Grate cheese and stir into sauce.
  7. Meanwhile, put the cooked eggs under cold water in order to peel them, but not so they cool down completely.
  8. Preheat grill.
  9. Cut eggs length-ways and place in oven proof dish large enough to accommodate all the ingredients (preferably with the egg halves in one layer).
  10. Pour cheese sauce over the eggs, making sure they are all covered.
  11. Sprinkle over breadcrumbs and a bit more grated cheese if you like.
  12. Place under grill for a few minutes until breadcrumbs browned.
  13. Serve immediately with plenty of crusty bread for dunking and mopping up.

    I think this is what is termed a retro dish from the 70's - all I remember is that it was my absolute favourite Sunday tea as a child. This is how I remember my Mother making it; real comfort food!
