Exotic fruit, chocolate and cereal fridge cake

  • 125g golden syrup

  • 50g crispy rice

  • 100g mixed exotic dried fruit chopped eg papaya, mango, pineapple

  • 60g pecan nuts, chopped (optional)

  • 150g porridge oats

  • 85g chocolate chips

  • 100g butter or margarine


  1. In a bowl combine the oats, crispy rice, chopped fruits and nuts.
  2. Put the butter, syrup and chocolate into a pan and heat gently until melted.
  3. Stir the mixture into the dry ingredients until they are well coated.
  4. Line a 20cm square cake tin with baking parchment or greaseproof paper and spoon the mixture into it, pressing down lightly.
  5. Leave to set in the fridge. When cold, cut into squares or rectangles.

    Sorry dairy free - no butter or marg? I don't like using "alternative" marg in cooking as rest of family don't like it! Disappointing

    Made this for my ds's 6th birthday party from a book called Lunchboxes by Annabel Karmel. Left out the nuts for this occasion. The kids liked it but the mums absolutely loved it!
