Gnocchi with roasted peppers

  • 1 tbsp olive oil

  • 1 large onion

  • 1 tbsp balsamic vinegar

  • 1 tin chopped tomato

  • 500g ginger

  • 3 peppers

  • 150g mozzarella

  • 1 tbsp thyme chopped


  1. Cut peppers and onion into wedges.
  2. Place peppers in a deep oven dish, coat with olive oil, thyme and balsamic vinegar, cover and roast for about 25 mins at 200C
  3. Add chopped tomatoes and gnocchi, (make sure gnocchi is covered) top with mozzarella and put back in the oven for a further 20 minutes (until cheese is browning slightly).
  4. Serve with a large salad.
