  • 1 eggs (medium)

  • 115g pain flour

  • 1 tsp thyme (or oregano - optional)

  • 115g butter

  • 115g Parmesan grated

  • 3 drops very cold water


  1. Mix the flour, butter and Parmesan in a food processor and process quickly to blend.
  2. Add the egg and whizz again. It should all come together in a ball, but may need a touch of iced water.
  3. Wrap it in cling film and chill it for at least an hour in the fridge before using.
  4. Roll out on a well floured surface to about 3-4mm and cut out in mini biscuit rounds. Cook in a 190C oven for about 8-10 minutes - just keep an eye on them!

    I use these for canapés. I make bite sized biscuits and top with a whole heap of different things: Mushroom Duxelle Boursin mixed with some creamed spinach and grated nutmeg Pata Negra Green olive and anchovy tapenade Roasted garlic (in skins) with olive oil and thyme, forked into a mash and topped with an olive or parmesan curl/gratings
