Ham and sweetcorn casserole

  • 1 onion peeled and sliced

  • 1/2 green pepper chopped

  • 1/3 tsp pepper

  • 1 tin sweetcorn drained

  • 140g ham cubed

  • 470ml semi-skimmed milk

  • 3 tbsp butter

  • 30g grated Parmesan

  • 1 handful instant potato flakes


  1. In a saucepan, over medium-high heat, saute peppers and onions in butter for 4-5 minutes or until tender.
  2. Stir in corn, milk and pepper; bring to the boil and remove from the heat.
  3. Fold in ham and potato flakes. Pour into 9-inch square casserole dish after spraying the vegetable cooking spray lightly over the dish .
  4. Sprinkle the cheese on top and bake at 190C, for about 25 minutes or until bubbly.
