  • 1 pinch salt and pepper

  • 2 tbsp double cream

  • 1 large onion

  • 600ml full cream milk

  • 1 bay leaves

  • 8 black peppercorns

  • 115g breadcrumbs

  • 50g butter

  • 1-8 whole cloves of 1/4 tsps grated nutmeg


  1. Cut the onion in half and stud with cloves, or use grated nutmeg.
  2. Put in saucepan with bay leaf, peppercorns and milk. Add salt and bring to boil.
  3. Take off heat, cover and leave in warm place for 2 hours or more.
  4. Remove the onion, bay leaf and peppercorns and put these aside.
  5. Stir the breadcrumbs into the milk, add 1oz butter and cook over low heat, stirring occasionally, until the crumbs are swollen (about 15 minutes).
  6. Put the onion back in the sauce and leave in warm place until needed.
  7. Just before serving, remove the onion and spices. Reheat gently, beat in remaining butter and cream and check seasoning. Put into warm jug.
