Mixed veg with couscous

  • 1 pint vegetable stock or enough to cover vegetables

  • 1 bag couscous

  • 1 bag frozen vegetables mixed, eg: peas, sweetcorn, broccoli, peppers


  1. Put the frozen veg in a pot with some vegetable stock (fluid should cover the veg) and boil a couple of minutes until soft.
  2. Put in some couscous, lid on the pan until the couscous has absorbed the fluid (1-2 minutes) - and it's ready!

    This is great if you don't have time for peeling and prepping veg. My little girls loves it and she always picks out the brocoli bits first!
