  • 1 tsp bicarbonate of soda

  • 55g caster sugar

  • 1/2 tsp ground ginger

  • 140ml full fat milk

  • 2 tbsp treacle

  • 1 eggs beaten

  • 225g plain flour

  • 85g butter


  1. Preheat the oven to 180C.
  2. Mix flour, ginger and bicarbonate of soda in a bowl.
  3. Melt fat, sugar and treacle in a saucepan, and add, with the egg, to the flour.
  4. Mix thoroughly and pour mixture into a 2lb loaf tin.
  5. Bake on the second shelf from bottom for 75 minutes.

Handy Hint

“Lazy ginger” will work just as well.

    Forgot to say earlier, I only needed to coke this for 45 minutes.

    Great recipe, really easy and quick to make. I think you are supposed to leave Parkin for a few days to mature and what was left on the second day did taste richer and more traditional but we really liked it warm from the oven, more cakey!

    It's an old recipe (handed down through DH's family but most recently adapted by my late MIL). Touches such as "Lazy Ginger" and using butter instead of half lard/half margarine, have made it a bit more modern and appealing to all.. but it tastes the same... Gorgeous! Great for Halloween and Bonfire night and a traditional "Northern Delicacy". Being a southern lass married to a northern lad, I hadn't heard of Parkin 'til I met him.. it was well worth marrying him for! :o)
