Tuna fishcakes

  • 1 potato cooked and left over

  • 1 spring onion (or standard onion)

  • 1 tin tuna

  • 1 eggs beaten


  1. Mash the leftover potato and mix with the tuna and beaten egg.
  2. Once is is a good consistency (not too sticky, if it is add bread crumbs) add the finely sliced onion and shape into burger shapes.
  3. Roll into flour and either bake in the oven or shallow fry in a frying pan in butter until nicely cooked through.

Handy Hint

ideal dish for left over potato also substitute the onion for sweetcorn or have both
