Carrot, apple and raisin cake

  • 225g self-raising flour

  • 0.5 tsp salt

  • 5 tbsp vegetable oil

  • 1 tsp ground cinnamon

  • 140g light muscovado sugar

  • 1 orange zested

  • 4 tbsp orange juice (apple also fine)

  • 1 medium eating apple peeled, cored and grated

  • 50g pumpkin seeds (optional)

  • 140g carrot finely grated

  • 85g raisins

  • 0.5 tsp baking powder


  1. Preheat the oven to 180C/Gas Mark 4.
  2. Grease a 20cm round cake tin (alternatively, I have done this as cup cakes/muffins and it works well).
  3. Mix flour, baking powder, salt and cinnamon in bowl.
  4. In separate bowl mix oil, juice and sugar. Add juice mixture to flour along with grated carrot, apple, orange zest, raisins and seeds and stir until really well mixed.
  5. Spoon into prepared tin and bake for 50 mins to 1 hour until cake pulls away from side. If doing smaller cup cakes then bake for 18 to 20 mins depending on your oven.

Handy Hint

This is a bit faffy with all the grating etc but it is a really tasty and moist cake.

    This is a surprisingly delicious recipe. As it contains no binder, I was expecting the cakes to be dry, but they were beautifully soft and most and kept for days. They weren't light and fluffy, but vegan cakes tend not to be. I used it for my ds with milk and egg allergies but was enjoyed by adults and toddlers - the only way I can get him to eat carrot at the moment! The carrot grating is a faff but after that it is qute easy. I used dairy free margarine melted with the sugar, then added the orange juice. Would definitely recommend for a treat and for special occasions.

    I made this for my son who has dairy allergy for 1st birthday. Went down really well with adults and kids alike and was healthy alternative to birthday cake.

    My youngest has many allergies including dairy, eggs and nuts so I use this cake or the vegan chocolate cake as a treat or birthday cake.
