Tortilla (Spanish omelette)

  • 1 onion

  • 1 handful cheese grated

  • 4-5 eggs

  • 2 tomatoes

  • 1 clove garlic

  • 1 handful frozen peas

  • 4-5 potatoes boiled and cut into chunks

  • 3 slices salami (or similar)

  • 3 mushrooms


  1. Chop the onion and garlic and fry for a few minutes in olive oil, using a large frying pan without plastic handles (so you can stick it in the oven later).
  2. Add the tomatoes, mushrooms, salami and peas and fry for a bit longer.
  3. Add potatoes to the pan.
  4. Briefly whisk the eggs and add the cheddar.
  5. Pour the egg/cheddar mixture over the potato mixture and mix well.
  6. Stick the pan in the oven and bake at 180C for about 30-40 minutes.

Handy Hint

My son absolutely loves this, and it's great finger food! (I only like it with lots of salt though).
