  • 1 tbsp olive oil

  • 1 tsp black pepper

  • 1 chicken (large)

  • 2 chicken stock cube

  • 1 tsp garlic powder

  • 1 tsp rock salt


  1. Wash the chicken, pat dry with kitchen paper.
  2. Put in a baking tray, pour a bit of olive oil over chicken then brush with pastry brush until evenly coated.
  3. Crumble chicken oxo cubes over the chicken then rub until evenly coated. Sprinkle on garlic granules or powder. Grind pepper and lastly salt to taste.
  4. Roast chicken in oven at 200C/Gas Mark 6 for 1 hour 30 mins to 2 hours.

Handy Hint

If you want to use a poussin just use 1 stock cube. Or, for less flavour on a normal sized chicken just use 1 cube - although who wants less flavour!

    I love this recipe as it's so quick and easy to make. Goes down a treat with my family and friends. Makes a great tasty change to beef for sunday lunch with all the trimmings. If you love crispy chicken skin this is the recipe for you! Your family will argue over who get's the skin. Best served immediatly.
