Old-fashioned chestnut stuffing

  • 225g sausage meat

  • 1 large onion peeled and chopped

  • 1 tsp dried thyme

  • 450g peeled chestnuts cooked

  • 1 turkey liver finely chopped

  • 1/4 tsp dried mace

  • 25g butter

  • 100g smoked streaky bacon finely chopped

  • 4 tbsp parsley


  1. Melt the butter in a large frying pan, and cook the onion, bacon and turkey liver for 10 minutes.
  2. Put into a large mixing bowl and add the remaining ingredients. Season with salt and pepper and mix together well.
  3. Put mixture in ovenproof dish.
  4. Bake for 30-35 minutes in a fairly hot oven at 180C/Gas Mark 4 until browned and crispy on top.
