  • 1 tbsp oil

  • 1 pinch salt

  • 1 tin chopped tomato (or equivalent in fresh, about 425 gs)

  • 3 tbsp sweetcorn

  • 1 small red pepper de-seeded and thinly sliced

  • 1 clove garlic peeled and crushed

  • 3 tbsp frozen peas

  • 1 tsp Italian dried herbs

  • 1 small onion peeled and thinly sliced


  1. Heat the oil, and gently fry the onion, pepper and garlic for 10 minutes, stirring often.
  2. Add the seasoning and the sweetcorn, peas and tomatoes. Simmer for another 5 minutes.
  3. Add salt to taste and serve.

Handy Hint

Value tinned tomatoes may be too watery so get a better quality. Excellent served with hot crusty buttered baguette on a cold day. Also lovely served with pasta and grated cheese on top.
