Spinach with feta and couscous

  • 1 splash olive oil

  • 1 handful pine nuts optional

  • 2-3 cloves garlic peeled and chopped

  • 45g couscous

  • 500g fresh spinach washed

  • 200g feta crumbled


  1. Chop garlic and fry gently in olive oil.
  2. Add the handful of pine nuts if using, being careful that they don't burn.
  3. Add washed spinach leaves and cook for 10 minutes or less.
  4. Prepare couscous according to packet instructions or you can by pre-cooked, it only takes 2 minutes to prepare following the instructions on the packet.
  5. Stir in the feta before serving and serve on a bed of couscous.
