Ziti and fried eggs

  • 3 tbsp olive oil

  • 1 pinch salt

  • 3 eggs

  • 2 cloves garlic

  • 2-3 dried red chillis

  • 2 handfuls ziti or other tube shaped pasta


  1. Boil the pasta and when it is almost cooked heat quite a lot of olive oil (about 3 tablespoons) in frying pan.
  2. Fry the chopped up chilli and garlic for 30 seconds in the oil and then fry the eggs.
  3. Season the eggs with salt and pour the chillies, oil and eggs over the pasta. You can also add Parmesan shavings to finish if you wish.
