  • 1/4 tsp bicarbonate of soda

  • 1 tsp vanilla extract

  • 25g caster sugar

  • 1/4 tsp baking powder

  • 1/4 tsp salt

  • 50g dark chocolate chopped into chunks

  • 125g unsalted butter

  • 175g soft brown sugar

  • 1 eggs

  • 175g porridge oats

  • 50g walnuts chopped

  • 100g plain flour


  1. Preheat the oven to 160C/Gas Mark 4. Mix the flour, bicarb, baking powder and salt in a bowl.
  2. Cream the butter, sugars, egg and vanilla in an electric mixer. Stir in the flour mix, then add the nuts, oats and chocolate.
  3. Line 2 baking sheets and drop large tablespoons of dough onto them. Press down gently. Bake for 8-10 minutes until light golden.
  4. Let them cool for 5 minutes before transferring to a wire rack. They will look underdone but will finish cooking on the hot tray. Wait until they are completely cool then pack into a tin lined with baking paper.

Handy Hint

If you don't have walnuts leave them out or substitute with something else like pecans or raisins.
