Instant chocolate mousse

  • 1 tsp vanilla extract

  • 287ml double cream

  • 250g milk chocolate

  • 50g soft butter

  • 60ml water

  • 150g mini marshmallows


  1. In a pan over a low heat, melt the chocolate, butter, water and marshmallows.
  2. Once melted, in a separate dish whip the cream with the vanilla until it is stiff.
  3. Fold the cream into the chocolate mix until combined.
  4. Spoon into 6 small dishes and place in the fridge until set.

    Sorry, but how can this be egg-free if it contains marshmallows? They are made from egg-white, so anyone who is allergic to egg would not be able to eat this mousse! Thought it needed pointing out!

    This is adapted from the wonderful Nigella who uses 70% cocoa chocolate, but which I found too rich.
