Lentil and bacon soup

  • 2 slices bacon chopped into small pieces

  • 1 tsp stock Marigold

  • 300g red lentils

  • 3-4 carrot peeled and grated

  • 1 ham bone (if you can get one)


  1. Fry the bacon in the bottom of a big saucepan.
  2. Add the ham bone if you have one.
  3. Add the lentils and carrots.
  4. Stir for a minute to wilt.
  5. Add 1.5l boiling water and the stock powder. Bring to boil then reduce to a simmer for at least 45 minutes, longer if you like a more mushy, thick soup.
  6. Remove the bone and allow to cool slightly before serving.

Handy Hint

Freezes beautifully. Goes well with cheese scones.

    Could be made veggie by leaving out the bacon, but tastes a bit dull then.
