  • 1 tsp baking powder

  • 1/2 tsp vanilla essence

  • 125g sugar

  • 125g soft butter

  • 1 tbsp syrup

  • 1 large egg yolk

  • 1 jar jam

  • 175g plain flour


  1. Cream the butter and sugar together
  2. Chuck in the egg yolk, syrup and vanilla essence.
  3. Mix in flour and baking powder.
  4. Roll into balls about the size of cherry tomatoes and then flatten on baking tray slightly with a fork.
  5. Bake for about 15 mins at 160C (but keep an eye on them), leave for a couple of mins then pop onto cooling rack.
  6. When cool sandwich together with jam and munch!

Handy Hint

Use icing as well as jam for extra treat!
