  • 1 tbsp olive oil

  • 1 tsp salt

  • 1/2 tsp golden caster sugar

  • 120ml warm water

  • 1 tsp dried yeast easy-blend

  • 2 tbsp polenta (cornmeal)

  • 170g plain white soft flour


  1. Sift the flour, salt, yeast and sugar into a bowl and make a well in the centre of the mixture. Add the olive oil and water. Mix into a dough with a wooden spoon, then use your hands for the final stage.
  2. Transfer dough onto flat surface. Knead for 3 minutes or so (it should be springy and elastic). Upturn the mixing bowl and put it over the dough on the work surface and leave it until it has roughly doubled in size (about an hour).
  3. Once it has done this, preheat the oven to 230C/Gas Mark 8, putting a baking tray in to warm up. Next, knock the air out of the dough and knead it a bit. Sprinkle some polenta onto the work surface and roll it out so the dough gets coated with the polenta.
  4. Raise the edges of the pizza slightly, then take warmed baking tray out of the oven, place pizza base on it and add toppings of your choice.
  5. Cook for 10-12 mins on a high shelf.

this freezes really well.

    good for the kids to be able to help with, espcially kneading the dough and knocking the air out of it once it has doubled in size, and very versatile for toppings.
