Easter chocolate fudge

  • 2 tsp cinnamon

  • 300g milk chocolate

  • 1 tsp mixed spice

  • 1/2 tsp nutmeg

  • 170ml evaporated milk

  • 350g granulated sugar

  • 100g currants or raisins

  • 25g butter


  1. Place sugar, butter and milk in a heavy bottomed saucepan.
  2. Heat gently until butter is melted, stirring continuously.
  3. Turn up the heat to bring the mixture to the boil, still stirring.
  4. Turn heat down and simmer mixture for 5 minutes, stirring occasionally. Time this so it's precise.
  5. Take off heat and add the chocolate, currants and spices. Leave for a few moments then stir in until all the chocolate has melted.
  6. Pour into a loaf tin lined with baking parchment. Put in the fridge to firm.
  7. Once firm take out and cut into bite size pieces.

Handy Hint

Original recipe was 300g white chocolate & 100g dried cranberries so the recipe can be adapted by using different ingredients but the same quantities. I've also made rocky road and dark chocolate with mint. All a great success and fab for gifts.
