Quick leftovers and asparagus soup

  • 1 medium onion chopped in half

  • 1 pinch salt and pepper (to taste)

  • 1 large potato (or several small leftover boiled potatoes)

  • 3 handfuls peas cooked

  • 1 pinch mixed herbs (to taste)

  • 1 handful carrot cooked

  • 1 vegetable or chicken stock cube

  • 1 tsp Worcestershire sauce (to taste)

  • 425g tinned green asparagus


  1. Put all the ingredients in a big pan and add a pint of water.
  2. Bring to the boil, turn the heat right down and leave to simmer for 30 minutes.
  3. Remove from the heat and leave to cool
  4. Puree in a blender (the most time consuming part of the process).
  5. Pour back into the pan and bring back to a simmer.
  6. Season to taste.

Handy Hint

Really easy and very tasty. If you have leftovers and don't like packet soups this is a quick fix.

If you're vegetarian use a veggy cube instead of chicken stock.

    I hope other are inspired like I was to start making soups using leftovers and whats in the cupboard.
