Tasty lentil and vegetable soup

  • 1 onion chopped

  • 1 pint vegetable stock enough to cover

  • 1 leek chopped

  • 1 handful red lentils

  • 3 sweet potatoes cut into big chunks

  • 1 carrot diced

  • 1 handful vegetables of your choice


  1. Fry the onion and leeks in a little olive oil until soft.
  2. Add the remaining vegetables.
  3. Put lid on pan and allow to sweat for 4-5 minutes. Add red lentils and enough stock to just cover the contents of the pan.
  4. Cover and simmer gently until all the vegetables are soft and the lentils have started to break down, usually about an hour.
  5. When slightly cooler, puree with a hand held mixer.

    This dish is a great source of vitamins, iron and protein. Can be served as a soup or you could use less stock and serve it in its thicker form on rice for little ones. The sweet potatoes make it very tasty for children. Also great as a baby puree.
