  • 1 pinch sugar (to taste, optional)

  • 1 pinch black pepper

  • 1 tsp stock powder

  • 4 salmon fillets

  • 1 pinch coriander

  • 4 oranges

  • 1 tbsp butter

  • 2 green onion


1.Preheat the oven to 180C. Place salmon fillets flat on a sheet of tin foil (large enough to fold ends together).
2.Chop green onions and sprinkle over fillets.
3.Sprinkle stock powder over fillets and a few twists of black pepper.
4.Squeeze oranges and pour juice over salmon.
5.Add knob of butter and a good handful of coriander.
6.Wrap ends of tin foil together to form parcel.
7.Bake in oven at 180C for 20-25 minutes.
8.When cooked keep salmon warm in foil by re-wrapping and pour juice into saucepan adding sugar (if desired) to taste and reduce slightly and pour over fillets.

Handy Hint

-remove green onions and coriander before serving
-serve with rice/couscous
