  • 1 onion finely chopped

  • 1 tsp olive oil

  • 1 tbsp red wine vinegar

  • 2 cloves garlic sliced

  • 3 tins plum tomatoes

  • 450g mozzarella

  • 400g dried pasta

  • 2 handfuls Parmesan freshly grated

  • 2 dried red chillis chopped

  • 1 pinch fresh basil


  1. Preheat the oven to 200C.
  2. Heat the olive oil. Add the onion, garlic and chili and slowly fry for about 10 minutes on a medium to low heat until softened but without any colour.
  3. Add tomatoes to the onion and garlic, with a small glass of water.
  4. Bring to the boil and simmer for around 20 minutes.
  5. Now put them through a food processor or blender to make a loose sauce. Tear your basil leaves into the sauce and season with salt, pepper and red wine vinegar.
  6. Bring water to the boil. Add the pasta to the water and when ready, drain and toss with half of the tomato sauce and a handful of Parmesan.
  7. Rub an oven dish with olive oil.
  8. Layer a little pasta in the pan, followed by some tomato sauce, a handful of grated Parmesan and 1 sliced-up mozzarella ball. Repeat these layers until you've used all the ingredients, ending with a good layer of cheese on top.
  9. Put in the oven for 15 minutes.
