4 tbsp olive oil

1 handful parsley

1 red onion finely chopped

1 courgette cut into thin strips

1 tbsp wine vinegar

1 handful pine nuts

1 block halloumi sliced

1 bag couscous or enough for 4 people
Method
- Prepare cous cous and leave to one side.
- Combine oil, wine vinegar, parsley to make marinade.
- Grill thinly sliced courgette in a little olive oil and season with a little freshly ground pepper.
- Slice and grill the halloumi.
- Sprinkle with pinenuts and more torn parsley just before you serve.
Handy Hint
Don't worry if you have some left over tastes even better the next day if stored in the fridge. Makes a very impressive cold picnic dish
