Chocolate fridge cake

  • 150g golden syrup

  • 100g unsalted butter

  • 150g milk chocolate

  • 150g plain chocolate

  • 250g digestive biscuits

  • 100g dried apricots chopped

  • 75g raisins

  • 60g pecans chopped


  1. Use clingfilm to line a 20 cm (8 in) shallo, square shaped tin. Leave extra cling film hanging over the sides.
  2. Bash the biscuits into pieces using a rolling pin.
  3. Melt the chocolate, butter and golden syrup in a heatproof bowl, set over a pan of simmering water, stir occasionally.
  4. Remove the bowl from the heat and stir in the broken biscuits, apricots, raisins and pecans.
  5. Spoon the mix into the tin. Level the surface by pressing it down with a potato masher.
  6. Leave to cool, then put the chocolate mixture into the fridge for 1 to 2 hours to set.
  7. Turn out the cake and peel off the clingfilm. Cut the cake into 12 squares and eat!

Handy Hint

For no 2. Bash the biscuits in a plastic bag so they don't go everywhere.

You can leave out the nuts if desired.
