Tuna, mushroom and roasted vegetable pasta bake

  • 1 yellow pepper roughly chopped

  • 100ml milk

  • 1 green pepper roughly chopped

  • 1 red pepper roughly chopped

  • 1 tin tuna

  • 1 tin sweetcorn

  • 1 handful cheese grated (plus more for topping)

  • 3 cloves garlic crushed

  • 400g pasta

  • 2 medium red onions halved and cut into thirds

  • 1 tin condensed mushroom soup

  • 2 handfuls mushrooms


  1. Preheat the oven to about 180C, then put the peppers, onions and mushrooms in an oven proof dish, without any oil. Place in the oven to roast for 30 minutes, turning frequently.
  2. After ten minutes, put the pasta on to boil.
  3. Gently heat the mushroom soup, adding the milk, the drained tin of sweetcorn and a handful of cheese. Stir frequently.
  4. Drain the pasta and add to the roasted vegetables, along with the drained tuna and the mushroom soup. Mix well, and scatter with cheese.
  5. Heat in the oven for 20 minutes, and serve with salad and garlic bread.

Handy Hint

Roast what ever vegetables you fancy, and use condensed tomato soup instead of mushroom if you prefer.

    This was fairly simple to make, and absolutely delicious! It made enough for at least five adults, we have got 3 meals out of it in total. My 2yo didn't eat much of it (toddlers eh?) but I think that it would be a hit with older children.
