Quick chicken and broccoli bake

  • 1 tbsp olive oil

  • 1 handful cheddar

  • 1 tbsp mayonnaise

  • 1 clove garlic

  • 1 large stem of broccoli

  • 1 tsp hot curry powder

  • 300g condensed soup chicken or mushroom

  • 1 tsp lemon juice

  • 1 chicken breast


  1. Chop the chicken breast into chunks.
  2. Finely chop the garlic put them both in a pan with a little olive oil and brown them over a medium heat.
  3. Par boil the broccoli and evenly distribute the chicken and broccoli over the bottom of an oven-proof dish.
  4. Start to heat the condensed soup and add in a large tablespoon of mayonnaise and squeeze in some lemon juice.
  5. Add approx 1 teaspoon of curry powder and stir together.
  6. Keep stirring and simmer so just bubbling for a couple of minutes then pour on top of chicken and broccoli.
  7. Grate some cheese on top and put it in the oven for about 20 minutes on quite a high heat.
  8. I always do about 180C but don't worry it's a very forgiving dish!

Handy Hint

its not cordon bleu but very tasty nd easy aadd curry powder to taste really

    can also make it with leeks or substitute chicken for quorn or vegetables for vegetarian version and in that instance mushroom soup not chicken!
