Pork fillet with olive oil bean mash

  • 5 tbsp extra virgin olive oil

  • 1 pork fillet

  • 275g sprouting broccoli

  • 10 slices streaky bacon smoked, rindless

  • 2 tins haricot beans


  1. Trim the fillet and then wrap in overlapping rashers of bacon.
  2. Place 2 tbsp of extra virgin olive oil in a pan and transfer in the wrapped pork fillet, seam side down first. Fry all over to brown.
  3. Place in a pre-heated oven at 200C/Gas Mark 6 for around 25 minutes or until the pork is cooked. Remove from the oven and leave to rest.
  4. Drain the beans and place in a bowl, mash with a sturdy fork. Place in a pan with the remaining extra virgin olive oil and heat through. Season with salt and freshly ground black pepper. At the same time, cook the broccoli in salted boiling water. Drain and reserve, keeping warm.
  5. To serve, slice the fillet into rounds and place on plates. Spoon bean mash alongside with broccoli. Pour the pan juices over the pork, adding more extra virgin olive oil to the mash so it runs down onto the plate.
