  • 1 tbsp oil (olive if preferred)

  • 1 tsp dried oregano

  • 125ml lukewarm water

  • 200g pizza flour

  • 1 clove garlic crushed

  • 200g mozzarella grated

  • 10g yeast

  • 70g tomato puree


  1. Mix the yeast with the lukewarm water.
  2. Add half a teaspoon of salt, oil and flour (hold a little back for later) and knead it all together.
  3. Cover the bowl and leave it to prove for approx 40 mins.
  4. Meanwhile get the filling ready. Mix the puree, garlic, oregano, salt and pepper together in a bowl.
  5. Take the dough out of the bowl and onto a floured worktop. Knead it thoroughly, using the rest of the flour if it's a bit sticky.
  6. Roll out to a square approx 35cm x 35 cm. Spread the filling on the dough and sprinkle mozzarella over it, but keep a little back to put on top before baking.
  7. Now roll it up rolypoly style, and cut into slices. Lay them on a baking sheet covered with baking paper and put the rest of the cheese over.
  8. Leave them to rest while the oven is heating up, about 20 minutes or so. Bake at 200C for approx 15 mins. Brilliant hot or cold!

Handy Hint

I usually double the recipe as they're gone in no time!
Thinly sliced ham is also good in the filling.
