Sweet potato falafel

  • 700g sweet potato

  • 1/2 lemon juiced

  • 2 tsp ground coriander

  • 1 tsp ground cumin

  • 2 cloves garlic peeled and chopped

  • 1 handful coriander leaves chopped

  • 100g plain flour


  1. Heat oven to 200C/180C fan/Gas Mark 6.
  2. Microwave sweet potato whole for 8-10 minutes until tender. Leave to cool a little, then peel.
  3. Put the potato, cumin, garlic, ground and fresh coriander, lemon juice and flour into a large bowl. Season, then mash until smooth.
  4. Using a tablespoon, shape mix and into 20 balls.
  5. Put on an oiled baking sheet, bake for around 15 minutes until the bases are golden brown, then flip over and bake for 15 minutes more until brown all over.

    Just made these for dinner and they were delicious! I added some crushed up pine nuts on top and it made them lovely and crunchy

    hi, are these freezable, do you reckon? And do you just let them cool, refrigerate and put in lunchboxes?

    Really easy. I've subsititued the corriander for basil when I couldn't get hold of it and that worked equally well. My daughter loves these and helps me shape them.
