Easy tomato pasta sauce

  • 1 splash vegetable stock

  • 1 tin chopped tomato

  • 2 tbsp extra virgin olive oil

  • 1 handful fresh basil

  • 2 fresh tomatoes or handful cherry tomatoes, optional


  1. Whizz all but the basil together in a processor - or electric hand whizzer.
  2. Now add the basil and pulse enough to tear the basil but still have visible pieces.
  3. Lightly heat through and serve with fresh pasta.
  4. Drizzle with olive oil and a few parmesan shavings if you wish

Handy Hint

Do not boil this or you will ruin the fresh flavour of it. Even though you are using tinned toms, this will taste heavenly I promise.

    Even better if you add onion, possibly garlic, paprika, or cumin.

    Just had this and was very good. Threw in some toasted pine nuts and a glug of red wine, then a spoonful of sugar as it was slightly bitter. Was a bit watery so needed to add cornflour. Might chuck in an onion next time too.

    This is cheaper and so easy to make. You will never ever buy supermarket bought fresh pasta sauce again. Budge over Jamie Oliver, here begins my own personal pasta sauce revolution!
