  • 1 tbsp tomato puree

  • 2 tbsp olive oil

  • 1 handful cheddar grated

  • 400g chopped tomato

  • 1 green chilli chopped

  • 1 tsp ground cumin

  • 4 eggs

  • 2 cloves garlic crushed

  • 2 tbsp coriander chopped

  • 1 small onion chopped


  1. In a saucepan, fry the onion until soft in olive oil.
  2. Crush the garlic and add to the pan with the chilli, finely chopped.
  3. Cook for a further 2 minutes and then add a teaspoon of ground cumin, cooking for another minute. Add a tablespoon of tomato puree and the chopped tomatoes and then cover and cook on a low heat for 15 minutes.
  4. Add a few teaspoons of chopped coriander and then make four wells in the sauce. Break one egg into each well and then sprinkle the whole mixture with grated cheese.
  5. Cover and cook until the eggs are done. You may like to brown it under the grill at the end just to crisp the melted cheese.

Handy Hint

Serve it in tortilla wraps
