Lamb and Lentil Casserole

  • 1 onion

  • 1 tomato puree

  • 1 stock cube

  • 1 tin chopped tomato

  • 1 pint water

  • 300g diced lamb

  • 3 medium carrots

  • 1 clove garlic crushed

  • 50g Greek yoghurt

  • 100g green lentils

  • 300g lamb diced


  1. Slice the onion thinly and fry in a little oil.
  2. Add the garlic and then the lamb.
  3. Once the lamb is browned add the rest of the ingredients and bring to the boil, then simmer for 20 minutes.
  4. Transfer to a casserole dish and put in the oven for 1.5 hrs at 150c.
  5. Season to taste and serve with green veg and crusty bread.

    It's so easy to make and totally delicious. It will stretch a pack of diced lamb to at least two meals (for two) and is really tasty for the winter. Great source of protein for babies and no need to add salt as it is so flavoursome!
