  • 1 lemons juiced

  • 1 handful olives optional

  • 2 chicken thigh or quarters of breast pieces if preferred

  • 200g houmous


  1. Preheat the oven to 180C.
  2. Place the chicken pieces in a casserole dish, scoop in the houmous and thoroughly coat the chicken. If you're adding olives, mix them in now.
  3. Throw the lemon juice on top.
  4. Stick it in the oven until the chicken is cooked, for about 45 minutes.

Handy Hint

Delicious with jacket potatoes and a salad.

    Serves as many people as you buy chicken for. Can use low fat humous for a lower calorie dish.
