Salmon with herby parmesan crust

  • 1 slice bread (large - or 2 small)

  • 2 cloves garlic peeled

  • 50g Parmesan (or Pecorino)

  • 1 tbsp fresh herbs (e.g. parsley, basil, dill)

  • 4 salmon fillets


  1. Pre heat oven to 200C (180C fan)
  2. In food processor, whizz up bread, garlic, cheese and herbs until fine breadcrumb consistency
  3. Lightly oil a baking or roasting tray
  4. Put salmon steaks in tray, skin side down
  5. Lightly brush top of fish with oil so that crust sticks
  6. Divide breadcrumb mixture onto the top of the fillets
  7. Season with black pepper
  8. Place tray in oven for 10-12 minutes until salmon just cooked through, serve

Handy Hint

Try with trout fillets too if you want a cheaper version
