  • 120g sugar (you may add more if you want it to be sweeter)

  • 500g cream cheese

  • 1 tbsp cinnamon (optional - or use cocoa)

  • 1 tsp vanilla

  • 5 eggs

  • 150g 30% fat cream

  • 100g butter

  • 250g cookies


  1. Using a blender, make crumbs out of the cookies and mix it with molten butter, with cinnamon or cocoa dust (the last two are optional), until all of the ingredients look one single mass.
  2. This mass should be put and well stuffed down at the bottom of the shape, where the cheesecake will be made, and put into a fridge for around 15 minutes.
  3. Cheese, cream, sugar and vanilla are to be mixed with a mixer, on a medium speed. Add one egg at a time to the mixture, while spinning on minimal speed. Watch out for bubbles, there must be none.
  4. Once the cream is ready take the shape out of the fridge and pour the cream into it. Then equalize the shape of the cheesecake so that it's nice and flat.
  5. While you are doing all of this, you should preheat the oven up to 160C. Once the cheesecake is ready – put it inside for 60 minute (+/- 5 minutes). You can see when it's ready – the edges will be slightly baked and the middle will be wriggling.
  6. Turn off the oven and let the cake cool down inside of it, and then in the room. This is to avoid cracks appearing on the surface. Once it cools down enough, put it in the fridge overnight. You can pour some gelatin on top of it.
  7. Before serving use a knife to gently remove the cake from the shape. Be very careful when you try to put it in another dish, since it is very delicate in nature. When serving, cut it into pieces with a hot knife. You may pour some cocoa or cinnamon on top of it for better looks if you wish.
