No-fail tomato sauce

  • 1 onion diced finely

  • 1 tbsp tomato puree

  • 2 tsp sugar

  • 1 splash wine

  • 1 clove garlic

  • 500g passata

  • 1 splash tabasco to taste)


  1. Sweat the onion slowly in oil until it softens (low heat), then add the tomato puree and garlic.
    Stir around briefly.
  2. Add a splash of old wine if you have it to deglaze the pan, then add a carton of passata and some sugar to taste. I also add a drop of Tabasco.
  3. It will look pretty unexciting a this point but let it simmer slowly for 30 minutes or until it thickens and turns dark red and it goes very sweet and nice.

Handy Hint

Add anchovies and tuna or capers and parsley, or cheese for the kids.
